Start by checking the leaves: if they're curling back and turning brown, you're getting close. Then look at the fruit. The skin should have a deep, even color and resist a gentle press with your fingernail. "Some orange types will continue to ripen after harvesting," says McLaughlin, but in general, pumpkins ripen best right on the vine.
